Hand of the Maker (Maguey at Marz pt 2)

Join Marz Community Brewing Co. for our second collaborative series with Lou Bank of SACRED Agave.

Lou Bank is the Agave Whisperer,and he has been working with mezcaleres all over Mexico for over a decade. Marz will be releasing in collaboration with “Drink More Wild Agave” a series of super limited edition wild agave spirits. You can be the first to try them at the Marz Mothership on Wednesday, April 8, from 6-8pm in a guided tasting with Lou.

This second session will highlight the Hand of the Maker. We’ll be sharing three agave spirits all made with the same agave (Inaequidens), in the same place (Rio de Parras, Michoacan), using the same process. But each is made by a different mezcalero, highlighting the importance of the hand of the maker.

Those three mezcaleros are

Marcelino Plancarte
Raul Pedraza Padilla
Jorge Perez

They cooked their agave underground in an earthen oven; milled the agave using wooden hammers; fermented it in wells; distilled it in wood-fired copper cazos with wooden condensers.

You will be able to purchase a set of three 200ML bottles of the spirits after the tasting.

Wild Mile Block Party

SACRED Agave will be joining Urban Rivers for the Wild Mile Block Party, an annual celebration of Chicago's urban waterways and thriving park spaces. We'll be sharing heritage agave spirits that reflect the same ancestral wisdom that inspired this floating garden space. And you can also enjoy local beer, food trucks, and an outdoorsy prize drawing while learning about local environmental nonprofits and volunteer opportunities! This event is free and fun for all ages!

The block party is rain-or-shine, and we'll only cancel in the case of hazardous weather!

Copitas de Sol 2026

The Auxiliary Board of the National Museum of Mexican Art invites you to Copitas de Sol: A Spirited Mixer produced in partnership with S.A.C.R.E.D. Join us and explore the world of superb agave spirits like mezcal, tequila, and raicilla. Plus, enjoy delicious bites by some of Chicago's best restaurants paired with each agave spirit brand. Each team serves small bites, petite cocktails, and neat pours. We’ll also have plenty of craft brews on deck just for you.

Copitas de Sol features two sessions offering two different ambiances. Pick the one that best suits you and your friends!

Agave Tales: 1:00 pm – 3:30 pm
Enjoy Copitas de Sol in a setting that allows for laid-back one-on-one conversations with brand ambassadors, restauranteurs, and bartenders. This is a great chance to discover your favorite agave expressions or the inspiration behind the delicious cocktails and small bites.

Agave Vibes: 4:30 pm – 6:30 pm
This upbeat session is for those who want to enjoy the event in a livelier atmosphere. All the great brand ambassadors and restaurants will be ready to receive you, with the addition of a live DJ and dancing. Social butterflies will flutter in this session while enjoying small bites, drinks, and a variety of agave spirits. Finally, try your luck in our raffle featuring enticing prize packages.

Mezcal Sunday Brunch featuring the Felipe & Ageo Cortes Karwinskii-palooza

Mezcal Sunday Brunch is a thing that should be a thing. Mexican food, brunch, and agave spirits are three great things that go great together. So we’re bringing them together on Sunday, March 8, at La Piña in Milwaukee!

The food? It’ll be fine. Eggs cooked in a sous vide for a couple days. Tortillas. Beans. Salsa.

The agave spirits? Epic. Felipe & Ageo Cortes in Miahuatlan, Oaxaca, cook their agave underground in a stone-lined earthen oven. They mill their cooked agave with an ox-pulled stone wheel. (That’s a tahona.) They ferment the agave open-air in wooden barrels. And they distill in wood-fired copper alambique stills with a refrescadera.

For this tasting, we’re sharing five spirits made by this father/son dream team using five agaves. There are more than 158 recognized species of agave in Mexico. The five used here are all different varieties of one of those species: Agave Karwinskii. You’ll get to taste Bicuixe, Madrecuixe, Tobaxiche, Tornillo, and Barreño.

And eat eggs, tortillas, beans, and salsa.

And drink water.

And leave satisfied that you’ve supported SACRED, a 501(c)(3) not-for-profit that helps the communities in Mexico who make heritage agave spirits to maintain their cultural heritage.

Maestra Agave Ale release party

Our friends at is/was Brewing have made another beer in support of SACRED's programs in Mexico! The 2025 edition features salmiana agave sourced from our friends at Mezcal Villasuso in San Felipe, Guanajuato. Be among the first to taste the collaboration at their Chicago tasting room on Friday, September 26! Here's a preview of what you'll get:

Maestra 2025

Agave: Salmiana from Villasuso

ABV: 5.4%

Production time: 10 months

We brewed the base beer in December with a mash of locally grown and malted pilsner malt and malted Oaxacan Green Corn, both from Sugar Creek Malt. We only used aged hops in the production of this beer, this is a traditional Belgian technique for making lambic style beers. The aging of the hops allows for the native lactic acid bacteria on the agave to acidify the beer and create its terroir-driven flavor while still allowing eh hops to inhibit food spoilage organisms.

While the beer was in primary fermentation we traveled to Villasuso with SACRED Agave and spent a few days with Malena and Pedro to see their process and get to know them and their mezcal. We brought back 150 lbs of roasted Salmiana agave hearts and transferred the beer on to the hearts for an extended secondary fermentation. Our goal was to extract the beautiful flavors of the roasted agave itself but also allow the native microflora (wild yeast and bacteria) of San Filipe to referment the beer and agave together and impart it’s unique sense of place into the beer.

The result is a unique beer with notes of sultanas, poblano peppers, under-ripe strawberries, dried dark cherries, figs, and light roast Geisha coffee beans with a touch of acidity on the finish.

When we talk about wine, we talk about grape varietals. When we talk about beer, it’s hops and malts. But chocolate…? It seems like the only thing you ever see on the package of the fanciest chocolate is where the cacao came from, or maybe how it was processed. But, we don’t typically hear about the wonderful varieties of cacao beans before they become bars…until now! 


In this educational chocolate tasting, Lou Bank gives an introduction into cacao bean varieties before they become the chocolate bars we all know & love. You’ll discover all kinds of cacao varietals & how the different places of origin influences the flavors and aromas, while you taste & sample along the way!


Tickets are $35 per person – each ticket includes a welcome cacao cocktail, a tasting of five chocolates, a cacao seed sampling, along with educational insight from Lou Bank about all things cacao!

Beyond Oaxaca: Mezcal across Mexico

Every media outlet from Architectural Digest to Vogue has declared that Mezcal is “having a moment” — and they’ve been declaring that for almost twenty years now. In this educational tasting of five heritage agave spirits, Lou Banks walks attendees through a Mezcal tasting that showcases a different region of Mexico with each pour. Learn about all the reasons why people continue to be drawn to Mezcal, learn some of the false narratives that make these spirits seem confusing, and uncover some of the unknown truths that make them more confusing still.

The fine folks at Cruz Blanca have invited us to their patio event on Sunday, August 17, and we’ll be there all day offering odds and oddities to dress up your home with a touch of rural Mexico.
